“When I think about comfort food, it’s not just the food – it’s working together as a family in its preparation. It is a feeling of comfort, family and enjoying each other. Comfort food always brought our large family of six kids and friends together and we all had some crazy, fun times. Half the neighborhood would show up at our big table on the back deck overlooking the beautiful lake.
The grill was fired up and the smoker was going, and the table was set for a family-style dinner. Our brother Tommy would have the tunes playing and it was time to eat!
So, to me comfort food was great meats, chicken and fresh fish with flavorful rubs, sauces, salsas, compotes…smoked meats, duck and even venison. Fresh fish caught in our lake was always on the menu too! This always brings back memories and I hope we can create this memory for our guests as well.” -Chef John

Recipe
CHEF DAN'S FRENCH ONION SOUP:INGREDIENTS :
4 medium onions
2 large cloves garlic
4 ten ounce cans beef consomme
2 soup cans of water
3 tablespoons olive oil
1/2 cup brandy
8 slices French bread
1-1/2 cups grated gruyere cheese
DIRECTONS:
1. Slice onions thinly.
2. Mince garlic.
3. Saute onions and garlic in 6T. butter until onions are soft but not brown.
4. Sprinkle flour over onions. Stir.
5. Add one can consomme and one can water and brandy.
6. Stir until soup is smooth and steaming.
7. Heat rest of butter and olive oil in a skillet. Saute bread until brown.
8. Place one slice of bread in bottom of bowl. Fill with soup.
9. Sprinkle with cheese. Broil until lightly brown.
